Dad’s ACTUALLY Famous Loaded Baked Potato Soup
The ways I have turned out to be just like my Dad are immeasurable at this point. He always does it better, so here is to hoping I am a lot like him when I grow up. An easy and delicious from-scratch recipe that is sure to enamor those who feast on it.
Ingredients:
6 slices of bacon
12 green spring onions
1/4 cup all-purpose flour
6 tbs butter
4+ cups milk
3 medium-large potatoes
1 package Lipton Dry Onion Soup Mix
1/3 to 1/2 cup sour cream
Shredded Cheddar Cheese (for soup topping)
Salt and pepper, generously
Directions:
-Fry 6 slices of bacon, then crumble and set aside.
-Dice a dozen spring onions (green onions), set aside.
-Cut 3 medium to large potatoes into 1/2 to 3/4 inch chunks then rinse well under running until the water is clear.
In a large saucepan melt 6 Tbs. of butter over medium heat. Wisk in 1/4 cup of flour and stir for 1 minute. Add 4 cups of milk and stir constantly for several minutes.
Generously add salt and pepper, stir. Add 1/2 of the crumbled bacon and 1/2 of the spring onions along with 1 package of Lipton dry Onion Soup Mix. Stir well.
Turn heat up to medium-high and add potatoes. Stirring frequently bring to boil then reduce heat and let simmer for 20 minutes or until potatoes are cooked and tender.
If soup gets too thick add more milk anytime along the way.
Once potatoes are cooked add 1/3 to 1/2 cup of sour cream and mix well. Once the soup begins to boil again, let's eat!
Top each bowl of soup with a mound of shredded cheddar cheese, bacon crumbles, and spring onions.
